Chef Samir Mulaokar is the Chef Trainer and the Head of Training and Placement cell at the Institute of Hotel Management, Aurangabad. In addition to these specialized roles, he is also responsible for executing the master classes from Ducasse education for senior professionals from the industry and the study abroad program for the students. He teaches the modules on Modern Gastronomy, Culinary Operations Management and Facilities Planning Management.
Prior to stepping into the world of teaching in 2014, Chef Samir was an Executive Chef with the Taj group of hotels and Marriott hotels, managing many of their premium properties in India and United Kingdom. He has an experience of over 22 years in hotel operations. He started his career at the prestigious Taj Mahal Palace and towers, Mumbai, as a hotel operations management trainee. In the years that followed, he shaped up his culinary knowledge and skills in different cuisines ranging from Modern European to Oriental to Regional Indian. However, to this day oriental cuisine remains close to his heart.
Chef Samir is well known in the hospitality industry for his food concepts, product innovation, and innovative kitchen and infrastructure designs. He also has a strong knowledge of kitchen administration, cost management, food safety management and kitchen facility planning.
His research interests are in emerging gastronomic trends and exploring the untamed regions of the regional Indian cuisines.
